My husband & I try to eat healthy as much as possible. Usually the days he works, are our healthiest days... and then unfortunately the days he is off... we kind of eat unhealthy... ahhh! But I usually try to eat pretty healthy still , because i am still nursing. & one time my caffeine intake went to the little guy... and he was nuts... so i try not to have caffeine, but I will sometimes have a dirty diet coke. Judge me.
So this tilapia recipe is the easiest thing of your life.. no kidding. I will even give you step by step directions!
I get Tilapia frozen usually (because its pretty expensive otherwise) & it is still healthy.
I usually cook 4-5 fillets at a time...So I let tilapia thaw for about 30-40 minutes on a plate & while they are thawing..
Preheat Oven at 350 Degrees.
Get a 13 x 9 cookie sheet pan & line it with foil (you'll thank me later)
Put fillets on the foil & get a 1/2 teaspoon of Olive Oil.
Spread the oil on top of ALL of the fillets... the oil will go a long way, so don't use more than 1/2 teaspoon. after that I usually just use my hand and rub it all over or I use the back of a spoon.. either way it gets the job done.
These Ingredients you will need for seasoning:
Sprinkle 1/2 teaspoon lemon pepper seasoning on & then I sprinkle Old Bay Seasoning on top of that. 1/2 teaspoon of each will do for ALL fillets. In a way, just sprinkle. You can never go wrong with a sprinkle!
I put that in the oven for 15 minutes.
I cut up 1 lemon (today I had to use lemon juice) but I usually would put 1/2 slice lemon on each tilapia. but since I am using lemon juice, I literally put a small splash of it on each fillet.
I let that bake for 5 minutes & then voila!
I made rice & quinoa with it as a side.
- Ancient Harvest *Gluten Free* Quinoa (Trader Joes, Sprouts, Good Earth)
-Lundberg *Organic Brown Long Grain Rice* (Smith's, Sprouts)
I mix in vegetables in the too. Whatever I have in the fridge.
Today is Mushrooms, Avocado, Green Pepper, Yellow Squash, Zucchini, Yellow Onion & Garlic.
I sauté Garlic & Onions first and then add in the vegetables one at a time after that. I put some salt & pepper on them as I turn them.
Once this step is done put Vegetables in with Rice & mix well.
